Tomato salsa with fresh tomatoes and coriander

Ingredients for 6 servings:

  • 1 kg tomatoes
  • 1 bunch coriander leaves, fresh
  • 1 bunch of spring onions
  • ½ Pepper, green
  • ½ pepper, red
  • salt and pepper

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

First, peel the tomatoes. This is best done with a vegetable peeler. Then, finely dice the tomatoes, spring onions, and deseeded peppers, using the liquid from the tomatoes or not, as desired. Chop the cilantro and add it. Finally, season to taste with salt and pepper. Unfortunately, fresh cilantro is almost only available in supermarkets. Dried cilantro hardly captures the fresh flavor. This salsa is great with chips, bread, or as a side dish with meat!
