Tomato sauce all' Arrabbiata

Ingredients for 2 servings:

  • 1 onion(s), red
  • 1 clove(s) garlic
  • 1 small pepper, or some paprika
  • 1 can tomatoes, chopped, approx. 400 g
  • some oregano and thyme
  • salt and pepper
  • 1 tbsp olive oil

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 55 minutes

vegetarian version with red onion and chili

Finely dice the onions, garlic, and chili peppers. Sauté in oil. Deglaze with the tomatoes and simmer with the spices for 30-45 minutes. Season to taste. The long simmering process generally eliminates the need for sugar, as the sauce takes on a wonderful flavor. Delicious with pasta, meat, or stuffed zucchini.
