Ingredients for 2 servings:

  • 500 ml tomato(s), strained, or 1 can of chopped
  • 1 small onion(s)
  • 1 clove(s) garlic
  • 2 tbsp oil
  • Vegetable stock powder
  • salt and pepper
  • Sugar
  • ½ red chili pepper(s) or sambal oelek
  • 1 ½ tbsp tomato paste
  • Water

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Finely chop the onion and garlic and fry briefly in the oil. Before the onions start to brown, add 0.5 cups of water and let it boil down almost completely. This will ensure the onions are cooked and easier to digest. If you prefer the soup a bit spicier, you can chop the chili pepper and fry it with the soup or add sambal oelek. Now add the passata or diced tomatoes to the pot and, if needed, add a little more water. For a real tomato flavor, add tomato paste. Season with salt, pepper, and sugar. Then add the vegetable stock to taste. A small dollop of crème fraîche, a little cream, or even shrimp or chopped smoked pork as a garnish goes well with it.
