Ingredients for 8 servings:

  • 4 tomatoes
  • 100 g rice
  • Water
  • 1 potato(s)
  • 1 onion(s)
  • 1 garlic clove(s)
  • 3 tbsp ketchup
  • 1 tbsp oil
  • 2 tsp vegetable broth
  • some parsley
  • some dill
  • Spice(s) of your choice

Working time approx. 20 minutes; Total time approx. 20 minutes

Lithuanian-style tomato soup with rice

Add the tomatoes to the boiling water and, after about 7 minutes, peel and dice all the tomatoes. Finely chop the onion and garlic. Heat the oil and sauté the onion and garlic until translucent. Then add the tomatoes and ketchup. Simmer over low heat. Stir occasionally. Season to taste. Add the rice, vegetable stock, and diced potatoes to the boiling tomato water. After about 10 minutes, add the tomatoes. Cook until the potatoes are tender. Add the parsley and dill. Season with the spices you usually use for soups.
