Tomato Soup Fresh and Fruity

- Vine tomatoes
- Black tomatoes
- Onion
- Black garlic
- Lemongrass
- Pointed peppers
- Red chilli pepper
- Tamarinds (sour date) freshly ripe
- Oregano (wild marjoram) fresh
- Pepper
- Salt
- Vegetable broth
- Tomato juice
- Vitell
- Physalis
- Brown sugar
- You start by preparing the tomatoes and all the other ingredients that need to be cut.
- Pound the tamer bark and divide it. Quarter the physalis. Knock on the lemongrass and cut the chilli in half and remove the seeds.
- Now sweat lemongrass, onion, garlic and a pointed pepper in a little clarified butter. As soon as the onion is golden yellow, add the brown sugar and tomatoes. Sweat well once, too. Now add the tamarind fruit.
- In the next step the liquid ingredients are added and everything is seasoned abundantly. Put the lid on and let it boil for 1 hour.
- As soon as the soup has boiled down, add the physalis fruits. If you don’t like that, just leave it out. If they are used then simmer for another 10 minutes.
- Since we were really hungry, I totally forgot to take a picture of the plate. SORRY 🙂 but will be made up for next time.
