Tomato soup with basil crème fraîche

Ingredients for 8 servings:

  • 3 shallots
  • 40 g butter
  • 1 piece(s) ginger (20 g)
  • 2 cans of tomatoes, peeled, 800 g each
  • 400 ml vegetable broth or vegetable stock
  • salt and pepper
  • ½ bunch basil
  • 1 sprig(s) mint
  • 200 g crème fraîche
  • Sugar

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 40 minutes

Finely dice the shallots and sauté in hot butter. Peel the ginger. Add the tomatoes with their liquid, broth, and ginger, and season. Simmer uncovered for about 20 minutes. Remove the ginger. Finely chop the basil and mint, mix with the crème fraîche, and season to taste. Strain the soup through a sieve and season to taste. Serve with herb crème fraîche.
