Tomato soup with cheese

Ingredients for 4 servings:

  • 50 g bacon, streaky, diced
  • 1 m.-sized onion(s)
  • 2 garlic cloves
  • 30 g butter
  • 1 large can of tomatoes, peeled
  • ¼ liter broth
  • 3 tbsp tomato paste
  • 1 bay leaf
  • pepper
  • 1 cup sour cream
  • 100 g cheese, grated (Gouda)
  • Thyme, dried
  • Oregano, dried

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Finely chop the onion and garlic. Sauté with the bacon in the butter until translucent. Add the tomato paste and fry briefly. Mash the canned tomatoes with a fork and add them to the pot with their sauce. Add the broth, bay leaf, and herbs, season with pepper, and simmer for 30 minutes. Remove the bay leaf and purée the soup. Then stir in the cheese and sour cream, heat until the cheese is melted, and season with pepper to taste.
