Tomato soup with sausages and meatballs

Ingredients for 12 servings:

  • 4 thick Mettenden
  • 5 Vienna sausages
  • 500 g minced meat
  • 1 bunch of soup vegetables
  • 800 g tomatoes, chopped, from the can
  • 200 g soup noodles
  • 1 tube(s) of tomato paste, 200 g each
  • salt and pepper

Working time approx. 30 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 30 minutes

Pierce the Mettenden sausages and simmer in a large pot of water for about 30-45 minutes. Meanwhile, chop the soup vegetables and the sausages. Season the minced meat with pepper and salt and form into small balls. Cook the soup vegetables in the water from the Mettenden sausages until tender. Remove the Mettenden sausages from the water and cut them into half slices. Add the two cans of tomatoes to the soup water, add the tomato paste, and then add the sausages, Mettenden sausages, meatballs, and pasta. Simmer the stew until the pasta and meatballs are cooked through. This dish contains approximately 268 kcal per serving.
