Tomato Soup with Tortellini
The perfect tomato soup with tortellini recipe with a picture and simple step-by-step instructions.
- 1 Onion
- 0,5 bunch Basil
- 1 tbsp Olive oil
- 8 Discs Bacon
- 2 Cans Canned tomatoes chopped
- 400 ml Vegetable broth
- 100 ml Cream
- Salt, pepper, sugar
- 500 g Tortellini with cheese filling
- Peel and dice the onion, pluck the basil leaves. chop coarsely. Heat the oil in a large saucepan. Fry the bacon slices in it, remove.
- Roast the onion in the frying fat, add the tomatoes, stock and cream. Cover the soup and let simmer for 20 minutes.
- Puree the soup with the blender and season with salt, pepper and approx. 1 tbsp sugar. Bring the soup back to the boil, add the tortellini and cook in the soup for about 5 minutes. Sprinkle the soup with slices of bacon and basil to serve.
