Tomato Soup with Tortellini

The perfect tomato soup with tortellini recipe with a picture and simple step-by-step instructions.

  • 1 Onion
  • 0,5 bunch Basil
  • 1 tbsp Olive oil
  • 8 Discs Bacon
  • 2 Cans Canned tomatoes chopped
  • 400 ml Vegetable broth
  • 100 ml Cream
  • Salt, pepper, sugar
  • 500 g Tortellini with cheese filling
  1. Peel and dice the onion, pluck the basil leaves. chop coarsely. Heat the oil in a large saucepan. Fry the bacon slices in it, remove.
  1. Roast the onion in the frying fat, add the tomatoes, stock and cream. Cover the soup and let simmer for 20 minutes.
  1. Puree the soup with the blender and season with salt, pepper and approx. 1 tbsp sugar. Bring the soup back to the boil, add the tortellini and cook in the soup for about 5 minutes. Sprinkle the soup with slices of bacon and basil to serve.
