Ingredients for 2 servings:

  • 250 g pasta, preferably spaghetti
  • salt water
  • 1 sausage (string sausage, chorizo ​​or paprika sausage)
  • 1 onion(s)
  • 200 g tomato paste
  • olive oil
  • salt and pepper
  • basil
  • possibly cheese

Cook the pasta al dente in boiling salted water as directed on the package. Add a little oil and the finely chopped onion to a hot pan. Then chop the sausage of your choice into small pieces and add it too, letting it brown nicely. You will need more or less fat depending on the fat content of the sausage. Push the sausage and onion to one side and add the tomato paste to the pan, sizzle until golden brown, then mix everything together again and continue sizzling. As soon as the pasta is ready, add it to the sausages along with a little of the pasta water. Bring to a boil briefly so that the pasta water thickens. Season to taste with salt and pepper. Add a little basil for visual appeal and a little cheese for flavor.
