Preheat the oven to 180°C (160°C fan-assisted oven). Line a tart tin with the puff pastry and prick it several times with a fork. Spread the pastry with mustard. Cut the tomatoes into approximately 0.5 cm thick slices and arrange them on the bottom of the tin. Slice the onion into thin rings, place them on top of the tomatoes, then season with salt and pepper. Finally, sprinkle with cheese. Bake in the oven for about 20-25 minutes. The cheese should melt slightly and the edges should be golden brown and crispy. Delicious warm or cold!
