  • n. B. Fleur de Sel for sprinkling

For the shortcrust pastry, quickly knead 1 egg, butter, flour, 1 tablespoon of cold water, and 1 tablespoon of chopped rosemary into a smooth dough. Roll out the dough on a greased baking sheet. For the topping, mix the goat’s cheese, 2 eggs, honey, mustard, and 2 tablespoons of chopped rosemary and season with salt and pepper. Spread the goat’s cheese mixture over the dough, top with finger-thick tomato slices, and add thinly sliced ​​onion rings. Bake in a hot oven at 180°C (top/bottom heat) for about 30 minutes. Sprinkle with fleur de sel, if desired. This tart tastes great with a green salad or even cold. It’s important to use good-tasting tomatoes!
