Tomato vinaigrette

Ingredients for 1 servings:

  • 250 g tomatoes (bottle tomatoes) or small vine tomatoes
  • 5 tbsp Balsamic vinegar bianco
  • 150 ml olive oil
  • Salt and pepper, from the mill
  • Sugar
  • 2 tbsp flat-leaf parsley, chopped
  • 1 tbsp basil, chopped
  • 1 tbsp pine nuts, roasted

Instructions

Working time approx. 10 minutes; Rest time approx. 15 minutes; Total time approx. 25 minutes

a fruity accompaniment to asparagus

Quarter the plum tomatoes and remove the seeds, then cut into large cubes. If using small vine tomatoes, just quarter them. Place the tomatoes in a bowl and toss with the vinegar, oil, salt, pepper, and sugar, along with the herbs and toasted pine nuts. Let it marinate for a while and serve with the asparagus.
