Ingredients for 1 servings:
- 250 g tomatoes (bottle tomatoes) or small vine tomatoes
- 5 tbsp Balsamic vinegar bianco
- 150 ml olive oil
- Salt and pepper, from the mill
- Sugar
- 2 tbsp flat-leaf parsley, chopped
- 1 tbsp basil, chopped
- 1 tbsp pine nuts, roasted

a fruity accompaniment to asparagus
Quarter the plum tomatoes and remove the seeds, then cut into large cubes. If using small vine tomatoes, just quarter them. Place the tomatoes in a bowl and toss with the vinegar, oil, salt, pepper, and sugar, along with the herbs and toasted pine nuts. Let it marinate for a while and serve with the asparagus.
