Tomato-Zucchini vegetables

Ingredients for 4 servings:

  • 2 thick zucchini
  • 3 large bell peppers
  • 3 tsp, heaped tomato paste
  • 1 large vegetable onion(s)
  • salt and pepper

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

simple and very tasty

Wash the zucchini and cut into bite-sized cubes, along with the bell peppers. Finely chop the onion and then sauté it in a pot or pan. Once cooked, add the zucchini and bell peppers. Roast for about 15 minutes, until the vegetables are crisp and cooked through. Add the tomato paste and stir to combine. Finally, season with salt and pepper. Tip: Add the salt at the very end, otherwise it will draw out too much water and taste less good.
