Silesian herring chops

Ingredients for 2 servings:

  • 2 fish(s) (herring)
  • n. B. water
  • 1 tsp mustard
  • 1 tsp oil
  • 50 g butter
  • ½ tbsp sugar
  • some salt and pepper
  • some sour cream
  • 1 tsp vinegar

Instructions

Working time approx. 15 minutes; Rest period approx. 1 day; Total time approx. 1 day 15 minutes

like my grandmother from Lower Silesia always did

First, soak the fish for 24 hours, changing the water at least once. Whisk together butter, mustard, and oil until fluffy, then mix with the well-scraped (chopped) herring, pepper, salt, sugar, and cream. Then stir in the soaked, finely chopped herring and season with vinegar. You can also use “regular” salted herring (without the herring).
