Ingredients for 4 servings:

  • 200 ml milk
  • 200 ml cream
  • 100 g sugar
  • 8 egg yolks
  • 2 tonka beans

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 25 minutes

Using a nutmeg grater, grind the tonka beans into a powder. The finer the finer, the better. Bring the milk and cream to a boil with the tonka beans and about 30 grams of sugar. Combine the egg yolks with the remaining sugar and beat until smooth. Add the beaten egg yolks to the milk and cream mixture and steam it to create a rose. This means that if you pour the liquid onto an upside-down wooden spoon and blow on it, you’ll see a rose. Let it cool and then pour it into the ice cream maker.
