poor knights with wine
Simmer the milk, lemon zest, and cinnamon stick in a saucepan over low heat for about 5 minutes. Cut the bread diagonally into 2cm slices. Next, separate the eggs, beat the egg whites until stiff, and then whisk them well with the egg yolk. Dip the bread slices one after the other, first in the cooled milk, then in the egg mixture. The egg mixture should thickly coat the bread. Immediately place them in a pan with plenty of oil and fry until golden brown on both sides. Then place them on kitchen paper to absorb any excess oil. Once cooled, arrange them on a platter, pour 2 tablespoons of wine over each slice, and then serve. Another variation is to add the wine straight to the cooled milk, then coat them in egg and fry as described.
