Ingredients for 2 servings:
- 250 g tortellini
- 100 g cooked ham, cut into strips
- 1 dash of olive oil
- 100 ml cream
- 1 egg yolk
- 50 g Parmesan, grated
- 1 pinch of nutmeg
- 1 pinch of salt
- 1 pinch(s) of pepper
- 1 tsp, heaped tomato paste
Instructions
Working time approx. 10 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 35 minutes
Cook the tortellini according to the package instructions. Meanwhile, briefly brown the ham in olive oil in a pan, then add half of the cream and simmer over low heat. When the tortellini are cooked, add them to the pan and continue simmering. Meanwhile, in a bowl, whisk the egg yolk with Parmesan cheese, nutmeg, salt, pepper, tomato paste, and the remaining half of the cream. Add the cream mixture to the pan and simmer until tender.
