Tortellini casserole with zucchini and minced meat

Ingredients for 4 servings:

  • 650 g zucchini
  • 250 g tortellini
  • 300 g minced meat
  • 1 bell pepper(s), red
  • 1 onion(s)
  • 2 cloves garlic
  • 1 pack of tomatoes, pureed or chopped
  • 200 g cream
  • 200 g cheese, grated
  • salt and pepper
  • Herbs of Provence
  • oregano
  • basil

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 55 minutes

Cook the tortellini in salted water until al dente, drain well, and arrange in a greased baking dish. Dice the onion, and cut the zucchini and bell pepper into bite-sized pieces. Preheat the oven to 180°C (top/bottom heat). Brown the diced onion with the minced meat in a large pot and season with salt and pepper. Add the zucchini, bell pepper, and crushed garlic and sauté for 10 minutes. Add the tomatoes and cream and season with Provençal herbs and oregano. Let stand for 5 minutes. If desired, add some fresh basil and tomato paste and season to taste. Add the zucchini, minced meat, and bell pepper mixture to the tortellini in the baking dish, mix, and sprinkle with cheese. Bake the casserole for about 25-30 minutes.
