Tortellini Chicken Tuscany

Ingredients for 4 servings:

  • 600 g chicken breast fillet(s)
  • 1 zucchini
  • 150 g cherry tomatoes
  • 1 onion(s)
  • 1 garlic clove(s)
  • Thyme
  • salt and pepper
  • 2 tbsp olive oil
  • 1 can tomatoes, chopped, 400 g
  • 1 tsp, heaped vegetable stock powder
  • 500 g tortellini with cheese filling (fresh from the refrigerated counter)
  • 2 tbsp balsamic vinegar
  • 50 g Parmesan, grated
  • 2 tbsp tomato paste

Working time approx. 20 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 35 minutes

First, rinse the meat and pat it dry. Then cut the meat into cubes approximately 2 cm in size. Next, slice the zucchini, halve the cherry tomatoes, and finely dice the garlic and onion (you can also crush the garlic). Heat the oil in a large pan. When the pan is hot, sear the meat pieces all over, season with salt and pepper, and then remove and set aside. Sauté the onion, garlic, and thyme in the drippings. Then add the zucchini and briefly sauté. Add the canned tomatoes and broth, and simmer for another 5-10 minutes. Finally, add the tortellini and meat to the pan and simmer for another 2-3 minutes. Stir in the cherry tomatoes, season with vinegar, and serve sprinkled with Parmesan cheese. 640 kcal per serving.
