Tortellini in sausage and cream sauce

Ingredients for 4 servings:

  • 250 g tortellini, dried (or fresh/chilled)
  • 750 ml water
  • 200 g meat sausage
  • 200 g mushrooms, fresh, or 1 small jar
  • 2 small onions
  • 1 cup of cream
  • 1 cup crème fraîche
  • 1 cube of stock
  • some oregano
  • some rosemary
  • some tomato paste

Working time approx. 20 minutes; Total time approx. 20 minutes

A simple, addictive favorite dish!

Cook the tortellini in 3/4 liter of water with a stock cube in a large pot for about 15 minutes. Do not drain the stock afterward! If using fresh tortellini, follow the instructions on the package so that they do not fall apart. In the meantime, chop the sausage, mushrooms and onions and fry them in a pan. Add everything to the tortellini, then add the cream and crème fraîche and bring back to the boil briefly. Season to taste with a little tomato paste and the herbs. This simple recipe is my family’s absolute favorite. It tastes best when made the day before and then reheated, although it rarely lasts that long at our house. We usually make double the batch and then eat it twice! The dish is also great for parties or when cooking with children.
