Tortellini muffins (savory)

Ingredients for 4 servings:

  • 400 g tortellini (the small ones!!)
  • 4 egg yolks
  • 300 ml whipped cream
  • 40 g cheese, Emmental or similar, grated or
  • 40 g Parmesan, grated
  • Salt and pepper, to taste

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

suitable as a snack or as a main meal

Cook the tortellini according to the package instructions, then drain. Whisk the cream and egg yolks with a hand mixer, adding salt and pepper to taste. If using Parmesan, add the cheese too! Otherwise: Mix the tortellini with the grated cheese. Then pour the cream and egg mixture over the tortellini and mix gently. Fill the mixture into silicone muffins or a muffin tin. Bake at 175°C for about 20 minutes, until the mixture is set! After baking, remove the muffins from the tin and serve immediately. Serve with a green salad.
