Ingredients for 4 servings:
- 250 g tortellini with meat filling (refrigerated section)
- some salt
- 300 g mozzarella (small mini balls)
- 250 g cherry tomatoes
- 3 spring onions
- 1 bunch of basil (or 1 pack of frozen basil)
- 3 tbsp vinegar (herb vinegar)
- 1 tbsp balsamic vinegar
- 1 tbsp dry sherry
- 1 pinch(s) of sugar
- black pepper, freshly ground
- 6 tbsp olive oil
- 1 clove(s) garlic
Instructions
Working time approx. 25 minutes; Total time approx. 25 minutes
Cook the tortellini according to the package instructions. Then drain and let cool. Drain the mozzarella balls and halve them. Wash and dry the cherry tomatoes, then halve any larger ones. Wash and dry the spring onions and slice them into rings, along with some of the green leek. Wash the basil and pat dry. Pick off the leaves. Set aside any small leaves and cut the larger ones into strips. Now mix the herb vinegar and balsamic vinegar with the sherry, salt, sugar, and plenty of pepper. Whisk in the oil and add the basil strips. Peel the garlic and press it through a press. Place the tortellini in a bowl with the mozzarella, tomatoes, and spring onions. Carefully mix in the marinade and let everything marinate for about 20 minutes, stirring occasionally. Season again to taste and serve garnished with the small basil leaves.
