Ingredients for 8 servings:
- 400 g tortellini, dried, small, colorful
- 2 large cans of peach(s)
- 10 slice(s) ham, cooked
- 1 jar Miracle Whip Balance
- 2 tbsp curry powder, English
- 1 pinch of salt
- some pepper, black, freshly ground
- 2 sprigs of lemon balm for garnish

Spicy – fruity tortellini salad – a hit at every summer barbecue
Cook the colorful tortellini in a large pot of salted water according to the manufacturer’s instructions until al dente. Dice the peaches (except for 1-2 peach halves for garnish) and the cooked ham. Note: You will still need some of the peach syrup from one of the cans for the dressing! Once the tortellini have cooled, add them to a large bowl along with the peach and ham cubes and mix the ingredients gently. To make the dressing, mix by hand about 1/4 of the peach syrup from one can with the mayonnaise, curry powder, a pinch of salt, and some freshly ground black pepper. Then pour the dressing over the salad and gently fold it in. Refrigerate the salad until ready to serve. Just before serving, stir it again, season to taste, and add more salt, curry powder, and peach syrup, depending on your taste and the consistency of the dressing. Then, slice the remaining peach halves into wedges and arrange them on the salad along with the lemon balm as a garnish. Tips: Alternatively, you can use 2 cans of apricots instead of the peaches or—if you have them—2 fresh mangoes, and a little mango juice for the dressing. For a lighter version, you can replace some of the mayonnaise with yogurt or use salad cream. The above version, with peaches and Miracle Whip Balance, has proven particularly successful.
