Tortellini Spinach Soup

Ingredients for 4 servings:

  • 2 tbsp olive oil
  • 1 onion(s), finely chopped
  • 2 carrots, finely diced
  • 2 cloves garlic, finely chopped
  • 1 liter chicken broth
  • 250 g spinach, coarsely chopped
  • salt and pepper
  • 250 g tortellini with meat filling
  • 40 g Parmesan, grated

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Heat the oil in a saucepan and add the finely chopped onions, carrots, and garlic. Sauté until the onions are softened. Deglaze with chicken stock and cook for another 10 minutes. Roughly chop the spinach, add it to the soup, and cook for another 5 minutes. Turn off the heat. In another pan, cook the tortellini in plenty of salted water for about 10 minutes, then remove and add it to the soup. Season with salt and pepper. Serve warm with grated Parmesan cheese.
