Ingredients for 2 servings:
- 1 bag of tortellini with vegetarian filling (e.g. cheese or spinach), fresh
- salt water
- 1 jar asparagus
- 1 handful of basil
- 100 g mozzarella, grated
- 1 small can of mushrooms, sliced
- salt and pepper
- olive oil
Instructions
Working time approx. 20 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 50 minutes
Cook the fresh tortellini in salted water according to the package instructions. Drain the asparagus and cut into approximately 3 cm long pieces. Heat the olive oil in a pan. Briefly fry the cooked tortellini in the olive oil. Add the asparagus pieces and sliced mushrooms and fry briefly. Season with salt, pepper, and plenty of basil. Pour the mixture into a baking dish and sprinkle with the grated mozzarella. Bake at 200°C (top/bottom heat) for approximately 25 minutes. The dish is ready when a nice brown crust has formed.
