Tortellini with asparagus, baked, vegetarian

Ingredients for 2 servings:

  • 1 bag of tortellini with vegetarian filling (e.g. cheese or spinach), fresh
  • salt water
  • 1 jar asparagus
  • 1 handful of basil
  • 100 g mozzarella, grated
  • 1 small can of mushrooms, sliced
  • salt and pepper
  • olive oil

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 50 minutes

Cook the fresh tortellini in salted water according to the package instructions. Drain the asparagus and cut into approximately 3 cm long pieces. Heat the olive oil in a pan. Briefly fry the cooked tortellini in the olive oil. Add the asparagus pieces and sliced ​​mushrooms and fry briefly. Season with salt, pepper, and plenty of basil. Pour the mixture into a baking dish and sprinkle with the grated mozzarella. Bake at 200°C (top/bottom heat) for approximately 25 minutes. The dish is ready when a nice brown crust has formed.
