Corona muffins

Ingredients for 1 servings:

  • 100 g butter, or 80 ml neutral oil
  • 270 g sugar, brown, alternatively white
  • 250 g flour
  • 2 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • 2 eggs
  • ½ lime(s), zest and juice
  • 160 ml beer (Corona), Desperados is also very tasty
  • 2 tbsp milk or buttermilk
  • some lime juice, about half a lime
  • powdered sugar

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes

Beer muffins, also as cupcakes

Mix the flour, baking powder, and salt in a bowl. In another bowl, combine the remaining ingredients. If using butter, first cream it with some of the sugar until fluffy. Add the flour mixture to the egg mixture and whisk briefly. Fill muffin tins 3/4 full and bake at 170°C (convection oven) for about 20 minutes, until lightly browned. For the icing, mix the lime juice and icing sugar and spread on the muffins. Alternatively, spread cream cheese frosting on the muffins.
