Tortilla casserole

Ingredients for 3 servings:

  • 6 flour tortillas
  • 500 g minced beef
  • 2 packs of tomatoes, pureed
  • 1 can of corn
  • 1 can kidney beans
  • 100 g cheese, grated
  • 200 g sour cream
  • 4 tbsp sauce (salsa sauce)
  • some tortilla chips with cheese
  • 1 small onion(s)
  • salt and pepper
  • Cayenne pepper
  • oil

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour 15 minutes

Fry the ground beef in a pan with a little oil until crumbly. Dice the onion, add it, and cook until translucent. Add the passata and bring to a boil. Add the corn and kidney beans. Season with salt and pepper, and adjust the heat to taste with cayenne pepper, chili powder, or sambal oelek. Fill each tortilla, one at a time, with 2-3 tablespoons of the ground beef sauce and fold each side into the center, one at a time, to form small parcels. Place these parcels next to each other in the baking dish. Spread the tortilla parcels with sour cream and then with salsa sauce. Place a layer of cheese tortilla chips on top and sprinkle with grated cheese. Bake at 180°C (convection oven) for about 20-30 minutes, until the cheese is melted and lightly browned.
