Ingredients for 4 servings:
- 250 g bell pepper(s), colored
- 200 g zucchini
- 1 clove(s) garlic
- 4 tbsp olive oil
- 100 g corn kernels from the can
- salt and pepper
- 5 eggs
- 100 ml cream
- 200 g cheese, grated
- ½ bunch parsley
- 1 tomato(s)
Instructions
Working time approx. 40 minutes; Total time approx. 40 minutes
Cut the peppers into thin strips and the zucchini and garlic into thin slices. Heat the oil in a pan and fry the peppers, zucchini, garlic, and sweetcorn, seasoning with salt and pepper. Mix the eggs with the cream and 100g of cheese, seasoning with salt and pepper, and stir in the chopped parsley. Line a shallow baking dish with baking paper, spread the vegetables on it, and pour over the egg cream. Slice the tomatoes and arrange them on top of the vegetables. Sprinkle with the remaining cheese. Bake in a preheated oven at 200°C (gas mark 3, fan oven: 180°C) on the second shelf from the bottom for 25-30 minutes. Allow to cool, then cut into cubes and pick up with a toothpick.
