Ingredients for 2 servings:
- 2 flour tortillas
- 1 cup crème fraîche
- 1 onion(s)
- 2 cloves garlic
- 200 g minced beef
- 4 stalk(s) asparagus, green
- 2 jalapeños
- 150 g Cheddar, grated
- salt and pepper

Instructions

Preheat the oven to approximately 200°C. Have two tortillas ready. Freshly made or, if you’re in a hurry, use ready-made ones. Peel the lower third of the asparagus spears and cook in salted water for about 5 minutes. Then cut into bite-sized pieces. Peel the onion and garlic. Halve the onion and slice into strips. Finely chop the garlic. Brown the ground beef with the onions and garlic in a pan with a little oil until crispy, season with salt and pepper. Slice the jalapeños into rings. Spread the tortillas with the crème fraîche. Season with salt and pepper. Top with the ground beef from the pan, the asparagus, and the jalapeños. Sprinkle generously with grated cheddar. Bake the tortillas on a baking sheet lined with parchment paper on the middle rack of the preheated oven for about 8 minutes.
