Asparagus – gourmet slices

Ingredients for 6 servings:

  • 500 g asparagus, white and green
  • 1 tbsp sugar
  • 200 g ham (salmon ham)
  • 30 g fat
  • 2 tbsp flour
  • ¼ liter of milk
  • 2 tbsp cream
  • 100 g cheese, grated
  • salt and pepper
  • 4 slice(s) bread(s) (crust bread)
  • nutmeg

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Peel the white asparagus, but only trim the ends of the green asparagus. Cook the white asparagus in boiling, lightly salted water with sugar for 18-20 minutes. Cook the green asparagus for about 10 minutes, then drain well. Dice the smoked ham. Heat the fat, sweat the flour in it, stir in the milk, bring to a boil, and simmer for about 5 minutes. Stir in the cream, 75g of the cheese, and the ham, and season to taste. Place the crusty bread on a baking sheet lined with baking paper and toast at 200°C for 4-5 minutes. Top with the asparagus, cover with the sauce, and sprinkle with the remaining cheese. Bake the bread at the same temperature for about 15 minutes. Garnish with fresh parsley.
