Tortilla rolls with avocado puree

Ingredients for 4 servings:

  • 8 leaves of radicchio
  • 3 onions (spring onions)
  • 1 handful of coriander leaves
  • 2 avocados
  • 2 tbsp lime juice
  • 2 tbsp olive oil
  • Tabasco
  • 8 tortillas
  • 250 g ham (farmer’s ham)
  • Salt

Working time approx. 15 minutes; Total time approx. 15 minutes

Wash the radicchio. Trim the spring onions and slice into fine rolls. Wash and roughly tear the cilantro leaves. Halve the avocados, remove the stone with a knife, and scoop out the flesh with a spoon. Mash finely with lime juice and oil in a bowl. Season generously with salt and Tabasco. Spread the avocado puree on the tortillas. Top with radicchio and ham, scattering the spring onions and cilantro on top. Fold the tortillas in at the sides, roll them up, and cut them in half diagonally. It also tastes good without the ham. Try using tofu or salmon instead.
