Tortilla with bacon

Ingredients for 2 servings:

  • 6 small tortillas
  • 225g bacon
  • 5 large mushrooms
  • 2 spring onions
  • 2 tbsp, heaped crème fraîche
  • some arugula
  • salt and pepper

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 25 minutes

Cut the bacon into strips and slice the mushrooms. Fry both slowly in a pan without any fat. Slice the spring onions into rings and briefly place them under running water in a sieve to remove any dirt. Then drain. Once the mushrooms and bacon are fried, add the spring onions and sauté them briefly. Add the crème fraîche, remove the pan from the heat, stir everything together, and season generously with salt and pepper. Top the tortillas first with the washed arugula and then with the mushroom and bacon mixture.
