Toska's crispy and fluffy beer crust bread

Ingredients for 1 servings:

  • 250 g wheat flour, type 505
  • 100 g whole wheat flour
  • 50 g wholemeal spelt flour
  • 30 g sesame seeds
  • 25 g sunflower seeds
  • 25 g oat flakes
  • 2 tsp salt
  • 150 g yogurt
  • 125 ml soda water, lukewarm
  • 50 ml beer
  • 1 pack of yeast

Instructions

Working time approx. 20 minutes; Rest time approx. 20 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 1 hour 20 minutes

Combine all types of flour with salt, sesame seeds, sunflower seeds, and oats in a large bowl. Add the yogurt and yeast. Heat the soda water in a small saucepan and stir out some of the carbonation. When the water is warm, pour the beer into the water and add both to the dough mixture. Knead the dough thoroughly for 10 minutes. Cover the bowl with a warm, damp cloth and let it stand in a warm place until the dough has risen well. Knead the dough thoroughly again and sprinkle the surface with a little flour and oats. Now you can place the finished dough in the oven (which has not yet been preheated) and set the temperature to approximately 160°C. Once the oven has reached the right temperature, brush the bread with a little beer; this will create a great crust. After another 10 minutes, you may want to score the bread in the middle with a knife, depending on how the bread rises on its own. Once the bread has reached the right temperature, bake it for about 40 minutes. Tip: Instead of one large loaf, bake two small ones. The optimal crispiness guarantees a truly delicious meal. You can even reduce the baking time slightly.
