Traffic light lettuce

Ingredients for 4 servings:

  • 1 small head of iceberg lettuce
  • 1 red bell pepper(s)
  • 1 small can of corn, well drained
  • ½ lemon(s), the juice
  • 2 tbsp oil, neutral
  • ½ tsp sugar
  • 1 tsp herbal salt, possibly more
  • ½ bunch chives
  • pepper
  • 1 carrot(s), if desired

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Cut the iceberg lettuce into strips, deseed and dice the bell peppers. Mix with the corn in a bowl. Mix the juice of half a lemon, oil, sugar, herb salt, a pinch of pepper, and chives to make a dressing, and toss it into the salad. If you like, you can also add a finely chopped carrot. It’s a favorite with kids, known as “traffic light salad”!
