Tropical Biscuits for Picnics

The perfect tropical biscuits for picnics recipe with a picture and simple step-by-step instructions.

  • Shortcrust pastry (KP)
  • Lime (juice and zest)
  • Figs
  • Pitted dates
  • Dried apricots
  • Freshly chopped pistachios
  • Almonds
  • Acacia honey
  • Brown rum
  • Sugar brown
  1. Take the shortcrust pastry out of the refrigerator and let it come to room temperature. Rolling out and then cutting out the biscuit rolls is the next step. Put the rolls on the greased baking sheet. Brush with the juice of one lime and zest from both limes. Then turn on the oven to 180 degrees O / U heat.
  2. Now the remaining ingredients are made. Dates, figs, apricots and pistachios are now cut into the desired pieces and heated in plenty of butter in the pan. Deglaze with the rum and allow to reduce. Now add the almond leaves. Spread the honey and sugar under the mixture and then on the rolls.
  3. Place the baking sheet in the preheated oven and bake the rolls for 12-15 minutes (depends on how much mixture is on top).
  4. Let cool and layer in a can. I always use a piece of parchment paper between each layer.
  5. So – that was the weekend trip with a picnic basket filled a`la Biggi. Which of course was also packed-a bottle of wine-chilled water and a lot of GOOD mood !!!! Maybe it is a suggestion even if the picnic takes place at home in your own garden or on the balcony 🙂 Have a nice rest of Sunday.
