Ingredients for 1 servings:
- 200 g butter
- 200 g cane sugar
- 200 g almond(s), ground
- 200 g flour
- 1 lemon(s), grated peel and some juice
- 1 egg yolk, whisked
- 50 g almond(s) (almond slivers)

an old family recipe – moist pastry
Combine the butter and brown sugar in a bowl and beat with a hand mixer for about 15 minutes until fluffy. Add the almonds, lemon zest, and a little lemon juice, if desired. Fold in the flour and knead the dough well. Refrigerate for 2 hours. Roll out very thinly (about 1 cm thick) and cut out cookies using your preferred cookie cutter. Brush with egg yolk and scatter some almond flakes over the dough. Bake in a preheated oven at 140°C – 165°C for about 8 to 10 minutes.
