Tuna and curd meatballs

Ingredients for 4 servings:

  • 1 can tuna in oil, approx. 200 g
  • 200 g low-fat curd cheese
  • 3 tbsp Parmesan
  • 2 tbsp capers
  • 2 eggs
  • salt and pepper
  • Parsley, flat
  • 2 cloves garlic
  • 1 onion(s)
  • e.g. breadcrumbs
  • Oil, for frying
  • 5 anchovy fillets

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 35 minutes

Finely chop the tuna, capers, garlic cloves, onion, parsley, and anchovy fillets in a blender. Then transfer the mixture to a mixing bowl and add the eggs, 4 tablespoons of breadcrumbs, the cheese, and the quark. Season with salt and pepper, mix well, and add more breadcrumbs if necessary to create a pliable dough. Then form into meatballs about the size of a plum, coat in breadcrumbs, and fry in hot oil. Serve with potato salad or lightly toasted white bread spread with herb butter and tzatziki.
