Tuna pasta with corn

Ingredients for 2 servings:

  • 250 g pasta (spiral pasta)
  • 6 Pepper
  • 1 can of tuna
  • 1 can of corn
  • 1 small onion(s)
  • 2 tbsp tomato paste
  • vegetable broth
  • 2 tbsp olive oil
  • salt and pepper
  • chili powder
  • Garlic
  • Herbs

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Cook the pasta in vegetable broth until al dente. Reserve some of the broth. Meanwhile, finely chop the peppers and onions. Drain the pasta when it’s cooked. Add the olive oil and onions to the pot. When the onions are translucent, add the peppers and the reserved broth. Stir in the tomato paste and seasonings. Now add the remaining ingredients to the pot. Adjust seasoning to taste. Enjoy!
