Ingredients for 4 servings:
- 1 kg turkey breast
- 6 tbsp steak pepper
- 2 tbsp raw cane sugar
Instructions
Working time approx. 2 hours; Cooking/baking time approx. 4 hours; Total time approx. 6 hours
Sous vide
Mix the steak pepper and the raw sugar. Toss the turkey breast in the mixture and press down firmly. Vacuum seal everything in a bag. Preheat the sous vide device to 80 degrees Celsius. Place the bag in the water bath for about 4 hours. Remove and let cool in the bag. When the turkey breast is cold, pat dry and cut into thin slices (cold cuts). Pairs well with asparagus.
