Turkey breast with mozzarella and tomato stuffing

Ingredients for 2 servings:

  • 2 turkey breasts
  • 1 large tomato(s)
  • 200g mozzarella
  • 4 basil leaves
  • salt and pepper

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 50 minutes

Preheat the oven to 175°C (top/bottom heat). Pat the turkey breast dry with a paper towel and remove any remaining fat. Then cut each cutlet lengthwise to create two cutlets. Place the two bottom halves in a buttered baking dish and season with salt and pepper. Slice the tomato and mozzarella and place one or two layers on top of the cutlets. Top each with two basil leaves. Place the top half of the turkey breast on top, season again with salt and pepper, and bake in the oven for 40 minutes. If desired, top the turkey breasts with one or two slices of mozzarella before baking.
