Swabian potato salad

Ingredients for 4 servings:

  • 500 g potatoes, waxy, cooked in the skin and peeled
  • ½ tsp caraway seeds
  • ¼ liter meat broth
  • 1 small onion(s)
  • 3 tbsp vinegar
  • 1 pinch of curry
  • 1 tsp mustard, hot
  • some salt and pepper

Instructions

Working time approx. 15 minutes; Rest time approx. 15 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 55 minutes

Slice the cooked potatoes very thinly. Make a dressing from the remaining ingredients and the hot broth. Pour the dressing over the potatoes while still hot. Stir through and let it simmer. Serve while still lukewarm.
