Ingredients for 4 servings:
- 500 g turkey breast
- 1 onion(s)
- 1 tbsp curry powder
- ½ can coconut milk (20% fat)
- 1 large can of peach(s), halves
- 200 ml vegetable stock
- Salt
- pepper
Instructions
Working time approx. 20 minutes; Total time approx. 20 minutes
Cut the turkey breast fillets into thin strips. Finely dice the onion. Sauté the turkey strips and diced onion together until the meat is cooked through. Drain the peach halves, reserving the juice. Cut the peaches into wedges, add them to the meat, and sauté briefly. Sprinkle with curry powder and sauté briefly. Deglaze with vegetable stock. Add the coconut milk. Season with salt and pepper, and add peach juice to taste. Thicken the sauce with a sauce thickener or cornstarch, if desired.
