- 300 g Turkey breast fillet
- 2 tbsp Olive oil
- 2 Branches Rosemary fresh
- Salt
- Hot paprika powder
- 1 Clove of garlic
- 1 Shallot
- 1 packet Root vegetable
- 2 tbsp Tomato paste concentrated three times
- 0,25 liter Riesling dry
- 1 tbsp Olive oil
- Grated lemon peel
- 4 Discs Raw ham
- 1 tbsp Chopped parsley
- Potato croquettes
- Rinse the meat and pat dry. Then cut into pieces about 2cm thick. Heat the oil in a pan and fry the fillets all around until crispy. Take out and season with salt and paprika. Finely chop the rosemary needles and roll the fillets in them. Now wrap the ham around it.
- Peel and finely chop the garlic and shallot. Clean the vegetables and cut into fine strips. Mix the tomato paste with the Riesling. Heat the remaining oil in the pan and sauté the garlic and shallot until translucent. Add the vegetables and sear them lightly. Add the wine mixture, season with salt and paprika.
- Place the fillets on the bed of vegetables and stew with the lid closed for about 15 minutes. In the meantime, prepare the croquettes in the oven. Mix the lemon zest and parsley into the vegetables and arrange everything.
