Ingredients for 5 servings:
- 1 turkey leg(s), whole (approx. 2.5 kg)
- 100 ml orange juice
- 2 tbsp honey
- 2 tsp rosemary
- 2 tsp thyme
- salt and pepper
- Garlic
- 250 ml white wine
- 500 ml chicken broth
- Flour or sauce thickener, optional

Wash the turkey leg and pat dry. Mix the orange juice, honey, all the herbs, pepper, salt, and garlic into a marinade and brush the turkey leg with it on all sides. Preheat the oven to 160°C (fan). Place the turkey leg skin-side up in a deep ovenproof dish and pour in the white wine and chicken stock. Roast for about 3 hours, basting occasionally with the meat juices. Since not all ovens heat up the same, it’s best to reduce the temperature slightly. It’s best to use a meat thermometer to check the doneness; in this case, it’s 80°C. After the roasting time is over, let the leg rest in the switched-off oven; the internal temperature will then rise to the desired 85°C. Strain the meat juices through a sieve, reduce slightly if necessary, and thicken with gravy thickener or flour, if desired.
