Ingredients for 4 servings:
- 4 thin turkey cutlets
- 60 g fresh herbs (parsley, chives, basil)
- 10 g butter
- 150g mozzarella
- 1 tbsp butter
- 1 tbsp oil
- 200 g crème fraîche
- 1 tbsp lemon juice
- Salt
Instructions
Working time approx. 20 minutes; Total time approx. 20 minutes
Flatten the schnitzels and sprinkle with salt and pepper. Chop the herbs, setting aside 1 tablespoon, then toss the remaining herbs in 10g of butter in a pan over low heat, then brush the meat with the herbs. Slice the cheese, arrange them on top, roll up the roulades, and secure them with skewers. Heat the butter and oil in a wide pan and fry the roulades over medium heat until light brown on all sides. Deglaze with a little water and cover. After about 10 minutes of simmering, add the crème fraîche and simmer for a further 5 minutes. Season the sauce with lemon juice, salt, and pepper. Remove the cooked roulades from the sauce, remove the skewers, and slice them open. Season the sauce with the remaining herbs and season to taste. Serve with potatoes and salad.
