Chicken breast baked with bacon and tomatoes

Ingredients for 4 servings:

  • 4 chicken breast fillet(s), fresh
  • 3 shallots
  • 150 g bacon, lean, diced
  • 1 can/n tomatoes, peeled, chopped
  • 1 cup of cream
  • 1 clove(s) garlic
  • Salt
  • pepper
  • some oil or clarified butter
  • 3 tbsp water

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Preheat oven to 180°C. Dice or halve the shallots. In a pan with a little oil or clarified butter, fry the bacon until slightly crispy, add the shallots and let them brown lightly. Add the garlic, if desired, and sauté briefly. Deglaze with about 3 tablespoons of water until the liquid in the pan dissolves. Then add the chopped tomatoes and simmer for about 5 minutes. In the meantime, wash the chicken breast fillets, pat dry, season with salt and pepper, and place in a shallow baking dish. Then add 1 cup of cream to the sauce in the pan and season with salt and pepper, and let it simmer briefly again. Pour the sauce over the chicken breast fillets and bake in the oven at 180°C for 35 to 40 minutes. Serve with rice as a side dish.
