Ingredients for 4 servings:
- 500 g turkey breast fillet(s)
- 2 chili peppers, red
- 2 onions
- 2 cloves garlic
- 1 piece(s) ginger, approx. 3cm
- 4 tbsp oil
- 2 tbsp fish sauce
- 2 tbsp oyster sauce
- 2 tbsp lime juice
- 1 tsp brown sugar
- 4 sprigs coriander leaves
- 1 lime(s), untreated
Instructions
Working time approx. 25 minutes; Total time approx. 25 minutes
Wash the turkey breast fillet, pat dry, and cut into bite-sized strips. Trim, deseed, wash, and finely slice the chilies. Peel the onions and slice them into thin wedges. Peel the garlic cloves and ginger and dice them very finely. Heat the oil in a wok. Briefly fry the chili strips, onions, ginger, and garlic. Add the turkey breast strips and fry over high heat for about 3 minutes. Season the meat with fish sauce, oyster sauce, lime juice, and sugar. Wash the coriander, shake dry, and roughly chop. Rinse the lime with hot water, rub dry, and cut into wedges. Sprinkle the turkey ragout with coriander and garnish with the lime wedges to serve. Serve with fragrant rice.
