Laab Gai – Thai chicken salad

Ingredients for 4 servings:

  • 200 g chicken breast or leg
  • 1 chili pepper(s)
  • 2 limes
  • 1 bunch of mint
  • ½ bunch coriander
  • 1 bunch Thai basil
  • 5 g short grain rice
  • 1 tsp fish sauce
  • 10 g palm sugar or coconut blossom sugar
  • salt and pepper

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes

Thai-style dinner

Lightly season the finely diced chicken with salt and pepper and sear in a pan. Add the finely chopped chili pepper to the meat mixture, mix well, and let cool. Once cooled, season with fish sauce, the juice of both limes, and the sugar. Toast the rice in a pan until nicely browned, then grind it in a mortar and pestle. Add the coarsely chopped herbs and rice to the seasoned meat mixture and serve.
