Turkey roll roast from the thigh

Ingredients for 6 servings:

  • 1 ½ kg turkey roast (rolled roast)
  • 2 tbsp clarified butter
  • 3 onions, red, peeled and diced
  • 2 garlic cloves, chopped
  • 3 tbsp tomato paste
  • 100 g tomato puree
  • 500 ml beer (pilsner)
  • 100 ml chicken stock
  • 100 ml apple juice
  • 1 apple, grated
  • Salt
  • Pepper, from the mill
  • some sour cream

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 1 hour 10 minutes; Total time approx. 1 hour 40 minutes

Rub the outside of the turkey roast with salt and pepper. Brown well on all sides in clarified butter. Remove the roast from the pot, add the onions, garlic cloves, and apple to the pot, and sauté lightly. Add the tomato paste and sauté. Deglaze with the beer, broth, and apple juice. Add the tomato puree. Return the roast to the pot, cover, and simmer over low heat for about 1 hour. When the roast is done, blend the sauce again with a food processor and add a little sour cream. Serve as a side dish: rice and salad.
